The Course Outline

What you're going to learn:

  • Module 1: Removing the Roadblocks. Module 1 is designed to help you gain early momentum and create a strong foundation for new life-long habits. Change starts with beliefs! We'll explore your "big whys" and examine any limiting beliefs which may have hindered your past efforts. You'll learn how a whole food, plant-based diet is going to benefit you, as well as the answers to questions about carbs, protein, fats, fiber, and calcium.

  • Module 2: Choosing Foods Which Promote Weight Loss and Healing. We'll take an in-depth look at which foods to include abundantly, which to include sparingly, and which to avoid altogether. You'll learn how to begin creating your own meal plans with very simple recipes, and how to begin cooking without using oils or other added fats. Plus, you'll be asked to begin your transition by eating a plant-based diet for at least 2 days this week (the number of plant-based days will increase with each passing week).

  • Module 3: Get Comfortable with Dairy- and Meat-free Cooking. In Module 3, you'll watch cooking videos and learn how to make substitutions for meat, dairy, and eggs. You'll get familiar with many new ingredients and learn what kitchen gear will make your life easier. You'll also be asked to perform a "make-over" on one of your existing favorite recipes.

  • Module 4: Batch Cooking and Time-Saving Tips. We all live busy lives, so Module 4 will teach you a few batch cooking techniques, time-saving tips, and quick meal ideas which will boost your confidence with plant-based cooking. Videos featuring easy meal ideas and desserts are included.

  • Module 5: Label Reading and Approved Processed Foods. The majority of fast foods and processed foods are highly addictive and purposely designed to hijack your brain. In Module 5, you'll learn which processed foods are acceptable when used sparingly, and how to quickly read a label to determine if it should go in your grocery cart or stay on the shelf.

  • Module 6: Gearing Up for Long-Term Success. The final module provides tips to assure your long-term success when faced with a few of the most common stumbling blocks, such as how to eat out, how to eat while traveling, how to attend parties, how to survive family/peer pressure, and where to find support. You'll also learn to sort through conflicting dietary information by using 7 tips to evaluate what you read and hear.

  • I know nothing about plant-based nutrition. Will this course benefit beginners?

    YES! The lessons are designed to help anyone, whether you're new to this way of eating or a seasoned veteran looking for a refresher course. Plus, I want to make SURE all of your questions are answered by offering support through the online group platforms and email access to me at anytime. Plus, there's a DISCUSSION button on each lesson where you can post your questions for me as they arise in the course.

  • What if I don't want to go completely plant-based?

    You'll still benefit. Every step toward plant-based eating is a step in the right direction! And who knows, you might be so impressed with the yummy foods that you'll change your mind. You should know, however, that the amount of weight loss and health benefits achieved is often dependent on someone's compliance rate to the plan. I do encourage you to join us, though, because all change is good, especially when we keep moving forward :)

  • What will my time commitment be?

    That depends on if you prefer a 6-week transition plan, or if you'd like to transition sooner. There are 6 modules in the course, and your goal should be to complete at least one module per week (which would be a 6-week transition process). The lessons within each module should take about an hour total to view (slightly longer for cooking videos). However, there's homework to do on your own time! You'll be asked to complete assignments, create a meal plan, begin to cook easy recipes, and actually implement what you're learning. All of this is necessary for your successful transition to a healthier you! However, you also have the option of completing the course in less than six weeks! If you're ready to jump in with both feet, there's no reason to wait. Accelerate your learning and go for it!

  • Will I need to spend a lot of time cooking?

    There's no doubt that learning a new way to cook is one of the main tenets of the course; however, you'll also be provided with a list of very easy recipes and a list of online resources where you can order frozen or pre-packaged foods, should you so desire.

  • What if I have food allergies?

    If you happen to be allergic or sensitive to certain foods, there are ways to customize the majority of the recipes by using substitutions. I'll be happy to give you guidelines, if needed.

  • Will I have lifetime access to the course?

    Absolutely! You'll have one-year access to the course material and videos (including all the updates), PLUS, you'll have additional free access anytime upon your request. You're also encouraged to stay connected in the community groups!

Reversed Carotid Artery Blockage

(excerpts): "In February 2010, a chance screening at a local church changed my life forever when an ultrasound revealed a 90% blockage of my right carotid artery. My physicians referred to me as a mystery. Having never smoked a cigarette in my 55 years of life, I maintained perfect "numbers." A seasoned half-marathoner, I consumed what I believed to be an incredibly healthy diet. Despite all of this, I found myself being wheeled into surgery. At my post-op evaluation one year later, an ultrasound indicated the blockage had worsened to about 60%. What more could I do? I had only one card left to play, for I was already the model patient.
